History of Baby Swiss Cheese
The first cheese to use the moniker “Baby Swiss” was introduced in 1968 by The Emmentaler Cheese Company in Monroe, Wisconsin. The cheese was so named because its small holes resemble the famous Swiss Emmentaler cheese, which had been produced in Switzerland since the 16th century. The American version of the cheese was created to resemble the original, but with a milder, creamier flavor than the original.
Appearance & Taste
Baby Swiss cheese is a semi-soft cheese with the characteristic tastes and aromas of the Swiss cheese family. Its eye formation (the famous holes) is lighter in color than the rest of the cheese, giving it a gorgeous marbled look. Production
Baby Swiss cheese is made in much the same way as the traditional Swiss, beginning with raw milk from cows grazing in the fields. The milk is heated and then inoculated with a culture that will produce lactic acid. Next, rennet is added to distinct the curd and whey. The curds are then cooked at a gently temperature and then poured into molds which are then pierced with metal needles to create the famous holes. This mixture is then salted and allowed to age for up to 17 weeks. This process creates the tender white, creamy, nutty-flavored cheese that we all love.
