Ingredients:
- 2 lbs round steak cut 1-inch thick
- 3 tablespoons butter
- 2 tablespoons oil
- 1 1/2 cups thinly sliced onion
- 1 teaspoon sugar
- 1/2 cup dry sherry
- 1 can (14.5 ounce) diced tomatoes, undrained
- 1 tablespoon steak sauce
- Salt/pepper to taste
Instruction:
- Season each steak generously with salt and pepper before starting – you can thank me later.
- Brown steaks in hot butter and oil in a large skillet for about two minutes per side.
- Add onion and sauté until onions are lightly browned – this will take about three minutes.
- Sprinkle sugar over onion and add sherry. Simmer until liquid is reduced by half.
- Stir in tomatoes with juice and a good tablespoon of steak sauce. Put the steaks back in the skillet and spoon the onion and tomato mixture on top of the steaks.
- Cover and simmer over medium-low heat for about 1 1/2 hours.
