- 1.5 lbs of Swiss steak, cut into ½-inch thick slices
- 1 tablespoon of oil
- 1 onion, chopped
- 1 clove of garlic, minced
- 1 bell pepper, chopped (optional)
- 1 can of diced tomatoes
- 2 cups of beef stock
- 1 teaspoon of sugar
- 1 teaspoon of thyme
- Salt and pepper to taste
Preparation
Before you start cooking, make sure your steak is properly seasoned. Sprinkle both sides generously with salt and pepper, and then let it sit for at least 15 minutes. That will give it plenty of time to absorb the seasoning.
Once that’s done, it’s time to heat up the oil in a large skillet over medium-high heat. Once the oil is hot, add the steak slices and let them cook for about 3 minutes on each side. Then remove them from the skillet and set aside.

Now you can reduce the heat to low and let the Swiss steak slow cook for 1 to 2 hours. Before serving, make sure it’s cooked through and check for seasoning. If it needs more, then season to taste.
